Description

This Chicken Kiev quesadilla is a delicious fusion of creamy garlic herb cheese, tender chicken thigh, fresh herbs, and melted cheddar all wrapped inside a crispy tortilla. Perfect for a quick and flavorful lunch or dinner, it combines the rich taste of classic chicken Kiev with the convenience and comfort of a quesadilla.

Wrap and Cheese

  • 1 large wrap or wheat tortilla
  • 4 tbsp garlic and herb soft cheese (we used Boursin)
  • 50g cheddar, grated

Vegetables and Herbs

  • 1 spring onion, cut in half then sliced lengthways into thick strips
  • ½ lemon, zested
  • ½ small pack flat-leaf parsley, chopped

Chicken and Toppings

  • 100g cooked chicken thigh meat, chopped into bite-sized pieces
  • 1 tbsp panko breadcrumbs

Instructions

  1. Heat the Pan: Heat a non-stick frying pan over medium-high heat to ensure it is hot enough to crisp the tortilla and melt the cheeses evenly.
  2. Prepare the Base: Spread half of the wrap with 2 tablespoons of garlic and herb soft cheese evenly. Place the wrap cheese-side down onto the heated pan.
  3. Add Fillings: On the half of the wrap that is exposed, layer the grated cheddar, spring onion strips, lemon zest, chopped flat-leaf parsley, and chopped cooked chicken thigh. Evenly scatter the panko breadcrumbs and dot the remaining soft cheese over the filling.
  4. Fold and Cook: Fold the soft cheese-spread side of the wrap over the filling to close the quesadilla into a half-moon shape. Cook for 3-4 minutes until the cheese melts, the tortilla is golden and crispy, and the filling is thoroughly heated.
  5. Serve: Remove from the pan, slice into portions, and serve immediately while warm and melty.

Notes

  • Use cooked chicken thigh meat for juicier and more flavorful filling compared to chicken breast.
  • If you prefer spicier quesadillas, add a pinch of chili flakes or hot sauce into the filling.
  • Panko breadcrumbs add a delightful crunch, but can be omitted if unavailable.
  • Make sure the pan is hot to achieve a crispy tortilla and melted cheese without burning.
  • This recipe can be customized with other fresh herbs or vegetables if desired.
