Marinade and Protein
- 3 garlic cloves, crushed
- Good chunk fresh root ginger, grated (about 1 tbsp)
- 1 red chilli, deseeded and chopped
- 1 tbsp soy sauce
- 2 tbsp tomato purée
- 2 chicken breasts, cut into chunky strips
Noodles and Vegetables
- 3 blocks dried egg noodles (approximately 300g total)
- ½ a head broccoli, broken into florets (about 150g)
- 3 carrots, cut into thin sticks (about 150g)
- 1 tbsp vegetable oil
- 300g pack beansprouts
- 3 spring onions, halved and sliced into long strips

- 1 tbsp oyster sauce
Instructions
- Marinate the Chicken: Mix together the crushed garlic, grated ginger, chopped red chilli, 1 tbsp soy sauce, and 2 tbsp tomato purée in a bowl. Add the chicken breast strips, stirring to coat them thoroughly. Leave the chicken to marinate while you prepare the remaining ingredients.
- Cook Noodles and Vegetables: Bring a large pan of water to a rolling boil. Add the dried egg noodles, broccoli florets, and carrot sticks all at once. Cook together for 4 minutes, then drain the mixture well to remove excess water.
- Stir-fry Chicken: Heat 1 tbsp vegetable oil in a wok over medium-high heat. Add the marinated chicken along with its marinade mixture. Stir-fry the chicken for 4 to 5 minutes, or until it is thoroughly cooked and no longer pink inside.
- Combine and Warm Through: Add the drained noodles and vegetables to the wok along with the beansprouts and sliced spring onions. Toss everything together gently to heat through evenly.
- Finish with Sauce: Mix 1 tbsp oyster sauce with 2 tbsp water and pour this mixture over the stir-fry. Stir well to coat the noodles, vegetables, and chicken evenly. Serve immediately while hot.
Notes
- For added zing, you can sprinkle chopped fresh coriander and squeeze lime juice over the dish before serving.
- You can adjust the heat level by adding more or less red chilli according to your taste.
- Dried egg noodles can be substituted with fresh egg noodles if available for a softer texture.
- To keep beansprouts crisp, add them only at the end of stir-frying to retain their crunch.
- Serve with extra soy sauce or chili sauce on the side for added flavor customization.
