  • 3 garlic cloves, crushed

  • 1 red chilli, deseeded and chopped
  • 1 tbsp soy sauce
  • 2 tbsp tomato purée
  • 2 chicken breasts, cut into chunky strips
  • 3 blocks dried egg noodles
  • ½ a head broccoli, broken into florets
  • 3 carrots, cut into thin sticks
  • 1 tbsp vegetable oil
  • 300g pack beansprouts
  • 3 spring onions, halved and sliced into long strips
  • 1 tbsp oyster sauce

Instructions

  1. Step 1: Mix together the crushed garlic, grated ginger, chopped chilli, soy sauce, and tomato purée in a bowl. Add the chicken strips and leave to marinate while preparing the other ingredients.
  2. Step 2: Bring a large pan of water to a boil. Add the egg noodles, broccoli florets, and carrot sticks. Cook for 4 minutes, then drain thoroughly.
  3. Step 3: Heat the vegetable oil in a wok over medium-high heat. Add the marinated chicken and stir-fry for 4 to 5 minutes until cooked through.
  4. Step 4: Add the drained noodles, vegetables, beansprouts, and spring onion strips to the wok. Toss everything together to warm through.
