Instructions

  1. Prepare the Avocado Spread: Lightly mash the ripe avocado in a bowl, then mix in ¾ tsp of olive oil, the juice of half a lime, and the finely chopped cherry tomatoes. Season with salt and pepper to taste, then set the mixture aside.
  2. Toast the Bagels: Slice the bagels in half horizontally, then toast them until they are lightly golden and crisp to your preference.
  3. Assemble the Bagels: Spread the avocado mixture evenly onto one half of each toasted bagel. Layer the shredded cooked chicken and fresh spinach on top of the avocado spread.
