It’s easy to prepare and makes a crowd-pleasing appetizer served with chips or veggies.

Ingredients

Scale

Main Ingredients

  • 2 cans refried beans (about 15 oz each)
  • 1/2 cup sour cream
  • 1 packet taco seasoning (about 1 oz)
  • 8 oz shredded sharp cheddar cheese, divided
  • Green onion, chopped, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 400˚F (200˚C) to get it ready for baking the dip.
  2. Mix Ingredients: In a large bowl, combine the refried beans, sour cream, taco seasoning, and half of the shredded cheddar cheese. Stir well until all ingredients are evenly incorporated.
  3. Assemble Dip: Spread the bean mixture evenly in a pie plate or medium-sized casserole dish. Then sprinkle the remaining shredded cheddar cheese evenly over the top.
  4. Bake: Place the dish in the preheated oven and bake for 20 to 30 minutes or until the cheese on top is melted, bubbly, and the dip is heated through and piping hot in the center.
  5. Garnish and Serve: Remove from the oven, garnish with chopped green onions for a fresh crunch and mild onion flavor, and serve warm with tortilla chips, crackers, or fresh vegetables.

Notes

  • You can substitute the sharp cheddar cheese with a Mexican blend or Monterey Jack for a different flavor profile.
  • For a spicier dip, add diced jalapeños or a dash of hot sauce to the bean mixture.
  • If you prefer a thicker dip, drain any excess liquid from the canned refried beans before mixing.
  • This dip can be prepared ahead of time and refrigerated before baking—just add a few extra minutes to the baking time if baking from cold.
  • Leftovers can be stored covered in the refrigerator for up to 3 days and reheated in the oven or microwave.
