Instructions
- Prepare the filling: In a bowl, combine the grated carrot with the raisins. Add the olive oil and white wine vinegar. Season with a pinch of salt and freshly ground black pepper to taste. Stir in the chopped mint to evenly distribute the flavors.
- Assemble the sandwiches: Spread houmous evenly over 2 to 3 slices of brown bread. Spoon the carrot and raisin mixture over the houmous layer.
- Complete the sandwich: Top with the remaining 2 to 3 slices of bread to make sandwiches. Press down gently, then cut the sandwiches into your desired shapes and sizes for serving.

- You can prepare the carrot and raisin filling a day in advance and store it in the fridge in a covered bowl to enhance the flavors and save time.
