  • 16 ounce Cauliflower
  • 2 tablespoon Water

Crab Mixture

  • 8 ounce Fresh Crab Meat
  • 5 tablespoon Mayonnaise
  • 1/4 teaspoon Wasabi Paste
  • 1/2 teaspoon Sesame Oil
  • 1 teaspoon Sriracha
  • Salt to taste

Toppings

  • 1 Avocado
  • 1 sheet Nori Sheet
  • 1/2 Cucumber
  • 1/3 cup Red Cabbage
  • 1 bunch Radish
  • 1 teaspoon Carrot
  • Sesame Seeds to taste

Instructions

  1. Cook the Cauliflower: Place 16 ounces of cauliflower florets in a microwave-safe bowl with 2 tablespoons of water. Cover the bowl with cling film and microwave on high for 10 minutes or until the cauliflower is tender.
  2. Prepare Cauliflower Rice: Drain any excess water from the cooked cauliflower. Transfer the florets to a food processor and pulse until they break down to the size of rice grains. Be careful not to over-process to avoid turning it into a puree. Set aside.
  3. Make the Crab Mixture: In a mixing bowl, combine 8 ounces of fresh crab meat with 5 tablespoons of mayonnaise, 1 teaspoon of sriracha, 1/4 teaspoon of wasabi paste, 1/2 teaspoon of sesame oil, and salt to taste. Stir thoroughly until all the ingredients are well incorporated.
  4. Prepare the Toppings: Slice 1 avocado, half a cucumber, and 1 teaspoon of carrot thinly. Clean and slice the radishes from 1 bunch. Also, shred 1/3 cup of red cabbage and cut 1 nori sheet into strips or bite-sized pieces.
  5. Assemble the Sushi Bowl: In serving bowls, layer the cauliflower rice as the base. Top with the creamy crab mixture followed by the prepared vegetables and nori strips. Sprinkle sesame seeds on top to finish. Serve immediately for best freshness and flavor.

Notes

  • Do not over-process the cauliflower to maintain a rice-like texture.
  • You can substitute fresh crab meat with imitation crab if preferred.
  • Adjust sriracha and wasabi quantities according to your desired spice level.
  • For a vegan version, omit crab and mayonnaise and replace with mashed chickpeas and vegan mayo.
