Ingredients
Scale
Turkey and Spices
- 1 tbsp Cajun spice mix
- 4 turkey breast steaks (about 500g / 1lb 2oz in total)
- 1 tbsp olive oil
Salsa
- 330g can sweetcorn, rinsed and drained
- 1 red chilli, deseeded and finely chopped
- Zest and juice of ½ lime
To Serve
- 8 flour tortillas
- 150ml pot soured cream
- Salad leaves
Instructions
- Season the turkey: Sprinkle the Cajun spice mix evenly over both sides of the turkey breast steaks to ensure full flavor coverage.
- Pan-fry the turkey: Heat 1 tablespoon of olive oil in a large frying pan over medium-high heat. Add the seasoned turkey steaks and cook for 4 minutes on each side until the meat is cooked through and juices run clear. Remove from the pan and rest for 2 minutes.
- Prepare the salsa: While the turkey cooks, combine the rinsed and drained sweetcorn with the finely chopped red chilli, lime zest, and lime juice in a bowl. Mix well and set aside to allow the flavors to meld.
- Slice the turkey: After resting, thinly slice the turkey breasts to make them easy to assemble into wraps.
- Warm the tortillas: Follow the pack instructions to warm the flour tortillas until soft and pliable, ready for wrapping.
- Assemble the wraps: Spread a little soured cream onto each warmed tortilla if desired, add a generous amount of sliced turkey, then top with a spoonful of the sweetcorn salsa. Add some fresh salad leaves, then roll up the wrap tightly.
- Serve: Serve the wraps immediately while warm, perfect as a quick and satisfying meal.
