Wrapped in warm flour tortillas and complemented by creamy soured cream and fresh salad leaves, these wraps deliver a delicious balance of smoky, tangy, and fresh flavors in every bite.

Ingredients

Scale

Turkey and Spices

  • 1 tbsp Cajun spice mix
  • 4 turkey breast steaks (about 500g / 1lb 2oz in total)
  • 1 tbsp olive oil

Salsa

  • 330g can sweetcorn, rinsed and drained
  • 1 red chilli, deseeded and finely chopped
  • Zest and juice of ½ lime

To Serve

  • 8 flour tortillas
  • 150ml pot soured cream
  • Salad leaves

Instructions

  1. Season the turkey: Sprinkle the Cajun spice mix evenly over both sides of the turkey breast steaks to ensure full flavor coverage.
  2. Pan-fry the turkey: Heat 1 tablespoon of olive oil in a large frying pan over medium-high heat. Add the seasoned turkey steaks and cook for 4 minutes on each side until the meat is cooked through and juices run clear. Remove from the pan and rest for 2 minutes.
  3. Prepare the salsa: While the turkey cooks, combine the rinsed and drained sweetcorn with the finely chopped red chilli, lime zest, and lime juice in a bowl. Mix well and set aside to allow the flavors to meld.
  4. Slice the turkey: After resting, thinly slice the turkey breasts to make them easy to assemble into wraps.
  5. Warm the tortillas: Follow the pack instructions to warm the flour tortillas until soft and pliable, ready for wrapping.
  6. Assemble the wraps: Spread a little soured cream onto each warmed tortilla if desired, add a generous amount of sliced turkey, then top with a spoonful of the sweetcorn salsa. Add some fresh salad leaves, then roll up the wrap tightly.
  7. Serve: Serve the wraps immediately while warm, perfect as a quick and satisfying meal.

Notes

  • You can adjust the amount of Cajun spice according to your preferred heat level.
  • For a gluten-free option, substitute the flour tortillas with gluten-free wraps.
  • Adding avocado slices or shredded cheese can enhance the wrap’s creaminess and flavor.
  • Leftover turkey can be stored in the fridge for up to 2 days and used in salads or sandwiches.
