  • 16 oz wide egg noodles
  • 46 Tbsp butter, cut into ¼” chunks
  • 23 Tbsp salt (for pasta water)
  • ¼ tsp salt (optional, for seasoning)
  • ⅛ tsp pepper (optional)
  • 2 Tbsp chopped fresh parsley (optional)

Instructions

  1. Boil Water: Put 4 quarts of water into a large pot along with 2-3 tablespoons of salt and bring it to a rolling boil over high heat.
  2. Add and Stir Pasta: Add the egg noodles to the boiling water and stir immediately to prevent sticking. Continue stirring every 10 seconds until the water returns to a boil, then reduce heat to a simmer.
  3. Set Timer and Cook: Set a timer for the lower end of the package cooking time (e.g., if package says 8-10 minutes, set for 8 minutes) and stir the noodles every minute or so to ensure even cooking.
  4. Test for Doneness: When the timer goes off, use a spoon to lift a noodle from the pot, cool it slightly by blowing on it, and taste. If not tender enough, continue cooking and testing every minute until desired softness is reached.
  5. Drain Noodles: Place a large colander in the sink and pour the pasta and water into it to drain thoroughly.
  6. Butter and Season: Return the drained noodles to the empty pot, add the butter chunks, and stir until fully melted. Taste and adjust seasoning by adding up to ¼ teaspoon salt if needed. Stir in pepper and fresh parsley if using.
