  • 2 large Eggs
  • 2 tablespoons Unsalted Butter (melted, plus extra for brushing the pan)

Instructions

  1. Melt Butter and Separate Eggs: Melt 2 tablespoons of unsalted butter and crack the 2 eggs, separating the yolks and whites into two medium bowls.
  2. Whisk Yolks: In a medium bowl, whisk the egg yolks until they become thick and pale yellow.
  3. Add Melted Butter to Yolks: Whisk the melted butter into the egg yolks until well combined.
  4. Incorporate Water: Whisk 1 cup of water into the yolk mixture.
  5. Add Dry Mix: Stir in 1 1/2 cups of Bob’s Red Mill Buttermilk Pancake & Waffle Mix until fully incorporated; then set the batter aside.
  6. Whip Egg Whites: In a clean bowl, whisk the egg whites until stiff peaks form but are not dry.
  7. Lighten Batter: Gently fold a spoonful of the stiff egg whites into the yolk batter to lighten it.
  8. Fold Remaining Whites: Carefully fold in the rest of the stiff egg whites to keep the batter airy and fluffy.
  9. Preheat Pan: Preheat the aebleskiver pan over medium heat according to manufacturer instructions.
  10. Butter the Pan: Brush each cup in the pan with melted butter to prevent sticking.
  11. Fill the Cups: Pour batter into each cup, filling about 3/4 full.
  12. Cook First Side: Cook until bubbles form and edges look set, about 1 1/2 minutes.
  13. Turn Aebleskivers: Use a fork or toothpick to turn each aebleskiver over.
  14. Cook Second Side: Cook for about 1 minute more until golden brown and a toothpick inserted comes out clean.
