Instructions
- Prepare the onion: Peel the onion, slice it in half through the root, and trim off the top. Place the cut-side down on a chopping board. With your knife parallel to the board, make 3 slices through the onion, keeping the root intact. Then, with the knife point at the root end, cut down through the onion from top to bottom 4 times. Holding the root, finely slice to create small diced pieces.
- Mix the burger ingredients: Combine the diced onion, beef mince, and egg in a bowl. Mix thoroughly until well combined.
- Shape the patties: Divide the mixture into four equal portions. Lightly wet your hands, roll each portion into a ball about the size of a tennis ball, then flatten gently in your palm to form patties about 3cm thick. Ensure all patties are uniform in thickness for even cooking. Place on a plate, cover with cling film, and refrigerate for at least 30 minutes to firm up.
- Prepare the barbecue: Heat the barbecue to medium hot — when there is white ash over red hot coals, approximately 40 minutes after lighting.
- Cook the burgers: Lightly brush one side of each patty with vegetable oil. Place the oiled side down on the barbecue and cook for 5 minutes without moving to achieve a nice char. Brush the other side with oil, then turn the burgers over using tongs. Avoid pressing down to retain juices. Cook for another 5 minutes for medium doneness. Adjust cooking time by 1 minute less per side for medium-rare or 1 minute more per side for well done.
- Rest the burgers: Remove the cooked burgers from the barbecue and allow them to rest on a plate, letting the juices redistribute inside the meat for a more flavorful bite.
- Toast the buns: Slice each bun in half and place cut-side down on the barbecue rack. Toast for 1 minute until lightly charred.
- Assemble and serve: Place each rested burger inside a toasted bun. Add your choice of sliced tomato, beetroot, horseradish sauce, mayonnaise, ketchup, lettuce, rocket, or watercress as desired, then serve immediately.
