Instructions
- Preheat Oven: Preheat your oven to 350 degrees F (175 degrees C) to prepare for baking the bread.
- Prepare Loaf Tin: Spray a loaf tin with coconut oil cooking spray and line it with parchment paper overlapping the long ends, then spray the paper again for easy removal of the bread.
- Mash Bananas: In a medium bowl, mash 2 of the ripe bananas thoroughly, reserving the remaining banana to slice in half for decorating the top of the bread later.
- Slice Jackfruit: Thinly slice the jackfruit into ½-inch thick pieces to add into the batter.
- Mix Dry Ingredients: In a large mixing bowl, combine cassava flour, coconut sugar, white sesame seeds, baking soda, and salt. Stir well and set aside.
- Melt Butters: Melt the almond butter and vegan butter together in the microwave in 30-second intervals until fully melted, then whisk to blend evenly.
- Combine Wet Ingredients: Add the melted butter mixture into the mashed bananas, then stir in nut milk and eggs until fully incorporated.
- Mix Batter: Pour the wet banana mixture into the bowl with the dry ingredients and stir until you have a smooth batter without lumps.
- Add Jackfruit: Gently fold the sliced jackfruit into the batter to evenly distribute the tropical fruit.
- Fill and Decorate Loaf Tin: Pour the batter into the prepared loaf tin and lay the halved banana slices on top as decoration.
- Bake: Place in the oven and bake for 45 to 50 minutes. Check doneness at 45 minutes by inserting a cake tester or skewer into the center; if it comes out clean, the bread is ready. If not, continue baking and test every 5 minutes.
