  • 1/4 cup White Sesame Seeds
  • 1 teaspoon Salt

  • 1 cup Jackfruit (thinly sliced)
  • 1/2 cup Vegan Butter
  • 1/4 cup Almond Butter
  • 2 Eggs
  • 1/2 cup Nut Milk

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees F (175 degrees C) to prepare for baking the bread.
  2. Prepare Loaf Tin: Spray a loaf tin with coconut oil cooking spray and line it with parchment paper overlapping the long ends, then spray the paper again for easy removal of the bread.
  3. Mash Bananas: In a medium bowl, mash 2 of the ripe bananas thoroughly, reserving the remaining banana to slice in half for decorating the top of the bread later.
  4. Slice Jackfruit: Thinly slice the jackfruit into ½-inch thick pieces to add into the batter.
  5. Mix Dry Ingredients: In a large mixing bowl, combine cassava flour, coconut sugar, white sesame seeds, baking soda, and salt. Stir well and set aside.
  6. Melt Butters: Melt the almond butter and vegan butter together in the microwave in 30-second intervals until fully melted, then whisk to blend evenly.
  7. Combine Wet Ingredients: Add the melted butter mixture into the mashed bananas, then stir in nut milk and eggs until fully incorporated.
  8. Mix Batter: Pour the wet banana mixture into the bowl with the dry ingredients and stir until you have a smooth batter without lumps.
  9. Add Jackfruit: Gently fold the sliced jackfruit into the batter to evenly distribute the tropical fruit.
  10. Fill and Decorate Loaf Tin: Pour the batter into the prepared loaf tin and lay the halved banana slices on top as decoration.
  11. Bake: Place in the oven and bake for 45 to 50 minutes. Check doneness at 45 minutes by inserting a cake tester or skewer into the center; if it comes out clean, the bread is ready. If not, continue baking and test every 5 minutes.
  12. Cool and Serve: Allow the bread to cool in the tin before removing. Slice and enjoy your moist, flavorful banana and jackfruit bread!
