Zucchini Fries

  • 2 Zucchini
  • 1 cup Panko Breadcrumbs
  • 1/4 cup Shredded Parmesan Cheese

  • 2 Large Eggs
  • 1/2 cup All-Purpose Flour

Dipping Sauce

  • 1/2 cup Plain Greek Yogurt
  • 1/4 cup Gorgonzola Cheese
  • 1/4 cup Light Mayonnaise
  • 2 tablespoon Fresh Chives
  • Ground Black Pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees F (220 degrees C) to prepare for baking the zucchini fries.
  2. Prepare Zucchini: Cut the zucchinis in half lengthwise, then slice each half into approximately 1/2 inch wide by 4 inch long fries. There is no need to peel the zucchini.
  3. Make Breadcrumb Mixture: In a medium bowl, combine panko breadcrumbs, shredded parmesan cheese, salt, smoked paprika, and ground black pepper, mixing well to ensure even seasoning.
  4. Set Up Dredging Stations: In separate bowls, place the all-purpose flour in one, and beat the eggs in another.
  5. Bread the Zucchini: Working in small batches, coat each zucchini slice first with flour, then dip it into the beaten eggs, and finally dredge it through the seasoned panko breadcrumb mixture. Place each coated fry on a parchment paper-lined baking sheet.
  6. Bake the Fries: Once all zucchini fries are breaded and arranged on the baking sheet, bake them in the preheated oven for 15 to 20 minutes or until they turn golden brown and crispy.
  7. Prepare the Dipping Sauce: While the fries bake, combine plain Greek yogurt, gorgonzola cheese, light mayonnaise, and fresh chives in a food processor. Blitz the mixture until smooth and season with ground black pepper to taste.
  8. Serve: Serve the baked zucchini fries warm with the creamy gorgonzola yogurt dipping sauce on the side.

  • For extra crispiness, you can spray the breaded zucchini fries lightly with cooking oil before baking.
