For the Minced Lamb Mixture

- 300ml beef stock
- 2 tsp cornflour
- 2 tsp water

Instructions
- Prepare the Vegetables: Heat the olive oil in a large pan over medium heat. Add the finely chopped onion, crushed garlic clove, finely diced carrot, and celery stick. Sauté for 6-8 minutes until the vegetables are softened and fragrant.
- Brown the Minced Lamb: Add the minced lamb to the pan with the vegetables and cook for 3-4 minutes, stirring frequently until the lamb is browned and cooked through.
- Add Flavorings: Stir in the sun-dried tomato paste and Worcestershire sauce, mixing well to coat the meat and vegetables evenly.
- Simmer the Mixture: Pour in the beef stock, then cover the pan and reduce the heat to low. Let the mixture simmer gently for 35-40 minutes until the lamb is very tender and the flavors are well developed. Season with salt and pepper to taste.
- Thicken the Sauce: In a small bowl, mix the cornflour with cold water to make a smooth paste. Stir this mixture into the simmering lamb and cook for an additional 1 minute to thicken the sauce.
- Serve: Split the freshly baked potatoes, spoon the cheesy minced lamb mixture generously over the potatoes, and top with grated cheddar cheese. Serve warm and enjoy!
