Baked Potato with Cheesy Mince Recipe

  • Author: Ben
  • Total Time: 1 hour 5 minutes
  • Yield: 4 servings 1x

Description

A comforting and hearty baked potato topped with a rich, flavorful cheesy minced lamb mixture. This dish combines tender minced lamb cooked with aromatic vegetables and sun-dried tomato paste, simmered to perfection in beef stock, then thickened and served over fluffy baked potatoes with a generous sprinkle of melted cheddar cheese.

Ingredients

Scale

For the Minced Lamb Mixture

  • 2 tbsp olive oil
  • 1 finely chopped onion
  • 1 crushed garlic clove
  • 1 carrot, finely diced
  • 1 celery stick, finely diced
  • 450g minced lamb
  • 2 tbsp sun-dried tomato paste
  • 1 tbsp Worcestershire sauce
  • 300ml beef stock
  • 2 tsp cornflour
  • 2 tsp water

To Serve

  • 4 large baked potatoes
  • Grated cheddar cheese, to taste

Instructions

  1. Prepare the Vegetables: Heat the olive oil in a large pan over medium heat. Add the finely chopped onion, crushed garlic clove, finely diced carrot, and celery stick. Sauté for 6-8 minutes until the vegetables are softened and fragrant.
  2. Brown the Minced Lamb: Add the minced lamb to the pan with the vegetables and cook for 3-4 minutes, stirring frequently until the lamb is browned and cooked through.
  3. Add Flavorings: Stir in the sun-dried tomato paste and Worcestershire sauce, mixing well to coat the meat and vegetables evenly.
  4. Simmer the Mixture: Pour in the beef stock, then cover the pan and reduce the heat to low. Let the mixture simmer gently for 35-40 minutes until the lamb is very tender and the flavors are well developed. Season with salt and pepper to taste.
  5. Thicken the Sauce: In a small bowl, mix the cornflour with cold water to make a smooth paste. Stir this mixture into the simmering lamb and cook for an additional 1 minute to thicken the sauce.
  6. Serve: Split the freshly baked potatoes, spoon the cheesy minced lamb mixture generously over the potatoes, and top with grated cheddar cheese. Serve warm and enjoy!

Notes

  • You can substitute minced lamb with minced beef or turkey if preferred.
  • For a spicier variation, add a pinch of chili flakes while sautéing the vegetables.
  • Use homemade beef stock for richer flavor, or high-quality store-bought stock for convenience.
  • To save time, prepare the minced lamb mixture in advance and reheat when ready to serve.
  • Grate the cheddar cheese finely to help it melt quickly over the hot filling.
