Instructions
- Make the dough: In a large bowl, combine 2 cups all-purpose flour, 1 tablespoon granulated sugar, 1 1/2 teaspoons ground cinnamon, and 1 teaspoon salt. Add 1 cup cold butter and work it in with your fingers until mixture resembles pea-sized pieces.
- Add eggs and milk: Whisk together 2 eggs and 1/4 cup milk. Pour into dry ingredients and mix until combined. Divide dough into two equal parts, wrap in plastic wrap, and chill in the refrigerator for 1 hour.
- Prepare apple filling: Peel and chop 2 apples into bite-sized pieces. In a frying pan, combine apples, 7 tablespoons dark brown sugar, 1 teaspoon ground cinnamon, 2 pinches salt, and 1 1/2 teaspoons lemon juice. Cook over medium heat, stirring until apples release juices and sugar dissolves.
- Cook filling until softened: Continue cooking until apples soften but retain some texture. Remove from heat, strain the juices from the apples, reserving both the cooked apples and the juice. Allow to cool.
- Preheat oven and prepare baking sheet: Heat oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly dust a work surface with flour.
- Roll out dough and cut rectangles: Roll one portion of dough into a 12×10-inch rectangle. Cut into 6 rectangles about 3 1/2 by 4 1/2 inches. Repeat with the second dough portion.
- Assemble pop tarts: Whisk 1 egg with 1 teaspoon water to make an egg wash. Brush a thin coat on each rectangle. Spoon 1 heaping tablespoon of the apple filling onto each, spreading 1 1/2 teaspoons of the reserved juice on top. Place a second rectangle on top and seal edges by pinching with a fork. Prick the top of each pop tart with a fork to vent.
- Bake: Place assembled pop tarts on the prepared baking sheet and bake for 23-25 minutes until golden brown.
- Prepare glaze: Mix 3/4 cup sifted powdered sugar with 2 tablespoons reserved apple cinnamon juices, 2 teaspoons lemon juice, and 2 teaspoons milk until smooth.
