Apple Filling

  • 2 Apples, peeled and cut into bite-size pieces
  • 7 tablespoons Dark Brown Sugar
  • 1 teaspoon Ground Cinnamon
  • 2 pinches Salt
  • 1 1/2 teaspoons Lemon Juice (from 1 Lemon)

Assembly

  • All-Purpose Flour, for dusting
  • 1 Egg
  • 1 teaspoon Water

Glaze

  • 3/4 cup Powdered Confectioners Sugar, sifted
  • 2 tablespoons reserved apple cinnamon filling juices
  • 2 teaspoons Lemon Juice
  • 2 teaspoons Milk

Instructions

  1. Make the dough: In a large bowl, combine 2 cups all-purpose flour, 1 tablespoon granulated sugar, 1 1/2 teaspoons ground cinnamon, and 1 teaspoon salt. Add 1 cup cold butter and work it in with your fingers until mixture resembles pea-sized pieces.
  2. Add eggs and milk: Whisk together 2 eggs and 1/4 cup milk. Pour into dry ingredients and mix until combined. Divide dough into two equal parts, wrap in plastic wrap, and chill in the refrigerator for 1 hour.
  3. Prepare apple filling: Peel and chop 2 apples into bite-sized pieces. In a frying pan, combine apples, 7 tablespoons dark brown sugar, 1 teaspoon ground cinnamon, 2 pinches salt, and 1 1/2 teaspoons lemon juice. Cook over medium heat, stirring until apples release juices and sugar dissolves.
  4. Cook filling until softened: Continue cooking until apples soften but retain some texture. Remove from heat, strain the juices from the apples, reserving both the cooked apples and the juice. Allow to cool.
  5. Preheat oven and prepare baking sheet: Heat oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly dust a work surface with flour.
  6. Roll out dough and cut rectangles: Roll one portion of dough into a 12×10-inch rectangle. Cut into 6 rectangles about 3 1/2 by 4 1/2 inches. Repeat with the second dough portion.
  7. Assemble pop tarts: Whisk 1 egg with 1 teaspoon water to make an egg wash. Brush a thin coat on each rectangle. Spoon 1 heaping tablespoon of the apple filling onto each, spreading 1 1/2 teaspoons of the reserved juice on top. Place a second rectangle on top and seal edges by pinching with a fork. Prick the top of each pop tart with a fork to vent.
  8. Bake: Place assembled pop tarts on the prepared baking sheet and bake for 23-25 minutes until golden brown.
  9. Prepare glaze: Mix 3/4 cup sifted powdered sugar with 2 tablespoons reserved apple cinnamon juices, 2 teaspoons lemon juice, and 2 teaspoons milk until smooth.
  10. Glaze and serve: Drizzle the glaze over warm pop tarts and serve immediately.
