Ingredients
Scale
Dry Ingredients
- 8 ounces Roasted Almonds
- 1 cup Old Fashioned Rolled Oats
- 1/2 cup Dried Cranberries
- 1/2 cup Sweetened Shredded Coconut
- 1/2 teaspoon Ground Cinnamon
- 1/4 teaspoon Salt
- 1/8 teaspoon Ground Nutmeg
Wet Ingredients
- 1/2 cup Almond Butter
- 3 tablespoons Honey
- 1 Orange (zest and juice)
Instructions
- Chop the Roasted Almonds: Finely chop the roasted almonds using a food processor until they reach a coarse, crumbly texture. This will provide a nice crunch and nutty flavor to the energy bites.
- Combine Dry Ingredients: In a large mixing bowl, add the chopped almonds, rolled oats, dried cranberries, shredded coconut, ground cinnamon, salt, and ground nutmeg. Mix well to evenly distribute all the dry components.
- Add Wet Ingredients: Stir in the almond butter, honey, and the zest and juice of one orange into the dry mixture. Mix thoroughly until all ingredients are well combined and sticky enough to hold together.
- Shape the Energy Bites: Using tablespoon-sized portions, roll the mixture into tight balls with your hands. Make sure each ball holds its shape and is compact.
- Chill to Firm: Place the formed energy bites on a tray or plate and refrigerate for at least 30 minutes or until firm. This helps them set and makes them easier to handle.
- Serve and Store: Once firm, serve immediately or store the energy bites in an airtight container in the refrigerator for up to one week. Enjoy as a healthy snack anytime!
Notes
- You can substitute the sweetened shredded coconut with unsweetened if you prefer a less sweet bite.
- For a nut-free version, try sunflower seed butter instead of almond butter and omit the almonds, replacing with seeds.
- Add a scoop of protein powder to boost the protein content if desired.
- These bites can also be frozen for up to one month; just thaw before eating.
- If the mixture is too sticky, add more oats or shredded coconut to reach the desired consistency.
