Instructions
- Cook the Sausage: In a large skillet over medium-high heat, cook 4 ounces of sausage, stirring frequently for 6 to 8 minutes until browned and fully cooked.
- Add Vegetables and Eggs: Add 2 tablespoons each of red onion, red bell pepper, and serrano chili to the skillet. Continue cooking and stirring until vegetables are softened. Crack 3 large eggs into the mixture and stir constantly until eggs are cooked through and fully incorporated, about 5 minutes. Season with salt and ground black pepper to taste.
- Warm the Tortillas: Meanwhile, heat each of the 8-inch flour tortillas in a large skillet or directly over the gas stove grates until soft and pliable, making them easier to roll.
- Assemble Burritos: Spoon about 1/4 cup of the egg and sausage mixture down the center of each tortilla. Fold the top and bottom edges over the filling, then roll tightly into a burrito shape. Lightly mist each burrito with nonstick cooking spray.
- Air Fry the Burritos: Place the burritos seam side down into the air fryer basket. Air fry at 400°F (200°C) for 4 to 6 minutes until the bottoms are lightly browned. Flip each burrito over, mist again with cooking spray, and continue air frying for another 2 to 4 minutes until evenly browned and crispy.
