Ingredients
Scale
Artichoke Hearts
- 1 teaspoon garlic powder
- ¼ teaspoon kosher salt
- 2 tablespoons olive oil
- ½ cup freshly grated Parmesan cheese
- 2 (14 oz) cans artichoke hearts (halved in water)
- cooking spray (for air fryer)
Garlic Aioli
- ¼ cup mayonnaise
- ½ teaspoon smoked paprika
- ¼ teaspoon kosher salt
- 1 large clove garlic (grated)
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
Instructions
- Preheat the Air Fryer: Set the air fryer to 400ºF and allow it to preheat while you prepare the artichokes.
- Prepare the Artichokes: Drain the artichoke hearts well. If whole, cut them in half. Pat dry thoroughly using paper towels by gently pressing to remove excess moisture.
- Season the Artichokes: In a bowl, toss the artichoke halves with olive oil until lightly coated. Add garlic powder and kosher salt, then toss gently to distribute evenly. Sprinkle Parmesan cheese over them and toss again to ensure each piece is covered.
- Air Fry the Artichokes: Spray the air fryer basket lightly with cooking spray to prevent sticking. Arrange the artichokes in a single layer inside the basket. Air fry for 5 minutes at 400ºF.
- Flip and Continue Air Frying: After the first 5 minutes, flip the artichoke hearts to ensure even crisping. Continue air frying for another 5 minutes until golden brown and crispy.
- Make the Garlic Aioli: While the artichokes cook, combine mayonnaise, smoked paprika, grated garlic, lemon zest, lemon juice, and kosher salt in a small bowl. Whisk all ingredients together until smooth and well blended.
- Serve: Remove the artichokes from the air fryer and transfer to a serving platter. Serve immediately alongside the garlic aioli for dipping. Enjoy your crispy, flavorful appetizer!
Notes
- Drying the artichokes thoroughly before air frying is essential for maximum crispiness.
- You can substitute smoked paprika with regular paprika if preferred.
- For a dairy-free version, omit the Parmesan cheese or use a suitable vegan alternative.
- This recipe is perfect for a quick keto-friendly snack or appetizer.
- If you don’t have an air fryer, these can be baked in a preheated oven at 425ºF for about 15 minutes, flipping halfway through.
