  • 1 tsp chilli powder
  • 1 red chilli, finely chopped
  • 1 tbsp fish sauce
  • handful mint, roughly chopped
  • handful coriander, roughly chopped

Instructions

  1. Step 1: Cook the rice noodles according to the package instructions. Drain and set aside.
  2. Step 2: Heat the sunflower oil in a non-stick pan over high heat. Add the turkey strips and fry for 2 minutes until browned.
  3. Step 3: Add the green beans, sliced red onion, and garlic to the pan. Cook together for a further 5 minutes, stirring occasionally.
  4. Step 4: Stir in the lime juice, chilli powder, chopped red chilli, and fish sauce. Cook for another 3 minutes to allow the flavors to combine.
  5. Step 5: Add the cooked noodles and the chopped mint and coriander. Toss everything together gently to combine before serving.
