  • 1/2 cup cottage cheese
  • 1/2 cup cheddar cheese, grated
  • 1/4 cup ham, finely chopped
  • 2 tbsp green onion, finely chopped
  • 4 eggs
  • 1/2 cup cottage cheese
  • 1/2 cup gruyere cheese, shredded
  • 1/4 cup cooked bacon, crumbled
  • 2 tbsp green onion, finely chopped
  • 4 eggs
  • 1/2 cup cottage cheese
  • 1/2 cup gruyere cheese, grated
  • 1/4 cup cooked mushrooms, chopped
  • 2 tbsp fresh dill, finely chopped
  • 4 eggs
  • 1/2 cup cottage cheese
  • 1/2 cup goat cheese, crumbled
  • 1/4 cup sausage, chopped
  • 2 tbsp green onion, finely chopped
  • 4 eggs
  • 1/2 cup cottage cheese
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup rotisserie chicken, chopped
  • 1/4 cup roasted bell peppers

Instructions

  1. Step 1: Spray the silicone molds with cooking spray, olive oil, or butter to prevent sticking. Set the molds aside.
  2. Step 2: In a blender or food processor, combine the cottage cheese, eggs, and hard cheese of your choice. Blend for 20-30 seconds until smooth.
  3. Step 3: Add the additional ingredients like meats, vegetables, or herbs. Pulse a few times to mix without fully pureeing, keeping a fluffy texture.
  4. Step 4: Evenly divide the egg mixture into the silicone mold compartments. Leave at least 1/4 inch space at the top to prevent overflow during cooking. Wipe any spills from mold edges for best results.
  5. Step 5: Cover the molds with their lids or tightly with foil, then place them on the trivet provided with your Instant Pot.
  6. Step 6: Add 1 cup of water to the Instant Pot. Lower the trivet with the molds carefully into the pot, ensuring it fits snugly.
  7. Step 7: Secure the lid and set the vent to sealing. Select the STEAM function and set the timer for 15 minutes. Allow about 5 minutes for pressure to build before the countdown starts. (For older models, cook for 10 minutes followed by a 10-minute natural release.)
  8. Step 8: When cooking is complete, let the pressure release naturally for 10 minutes, then carefully release any remaining pressure before opening the lid.
  9. Step 9: Remove the molds one by one, watching out for hot steam. Let the egg bites cool for a few minutes before gently removing them from the molds and serving.

Tips & Variations

  • Use fresh herbs like thyme, chives, or parsley to brighten flavors.
  • Swap cottage cheese for ricotta for a creamier texture.
  • Try different cheeses like mozzarella, pepper jack, or Swiss for variety.
  • Include sautéed vegetables such as spinach, bell peppers, or zucchini for extra nutrition.
  • These egg bites freeze well—store in airtight containers and reheat gently in the microwave.

Storage

Store cooked egg bites in an airtight container in the refrigerator for up to 4 days. To reheat, microwave on medium power for 30-60 seconds until heated through. You can also freeze them for up to 2 months; thaw overnight in the fridge before reheating.

How to Serve

A white bowl is filled with many small rounded yellow pieces that look soft and spongy, some of them cut open to show different fillings inside. There are two types of fillings: one is pale with bits of green and light brown, and the other is darker green, leafy, and finely chopped. The bowl is placed on a white marbled texture with a light blue-striped cloth beside it. Next to the cloth is a knife with a beige handle resting on the surface. FAQs

Can I use regular metal or glass molds instead of silicone?

Silicone molds are best because they handle the steam cooking and release the egg bites easily. Metal or glass molds may work but can be harder to remove the egg bites from and might not fit well inside the Instant Pot.

Do I need to pre-cook ingredients like bacon or sausage?

Yes, it’s important to fully cook meats like bacon, sausage, or ham before adding them to the egg mixture to ensure safety and best flavor.
