Ingredients

  • 400g can fava beans (available online) or broad beans
  • 1 small onion, finely chopped
  • 2 garlic cloves, crushed
  • 100ml olive oil
  • 2 tsp ground cumin
  • 1 tsp chilli flakes
  • 2 large, ripe tomatoes, roughly chopped (or 200g can of chopped tomatoes)
  • ½ lemon, juiced
  • 2 tbsp tahini
  • 2 tsp sea salt flakes

Instructions

  1. Step 1: Drain the fava beans and rinse them well. Fill the empty, clean bean can with water and pour both into a saucepan. Bring to the boil to warm through, then remove from the heat.
  2. Step 2: In a medium frying pan, gently fry the chopped onion and crushed garlic in most of the olive oil (reserve a few tablespoons) over medium heat for about 5 minutes until soft.
  3. Step 3: Add the sea salt flakes, ground cumin, chilli flakes, and chopped tomatoes to the onion mixture. Stir to combine.
  4. Step 4: Drain the beans, reserving some of the cooking liquid. Add the beans to the frying pan and cook over low heat for 30 minutes, stirring often. Add reserved cooking liquid if the mixture seems dry.
  5. Step 5: Using a potato masher, mash the beans with the remaining olive oil, lemon juice, and tahini until you get a chunky, soft purée. If it splits, stir in a drop of cold water to bring it back together.

  4. Mash and Finalize: Use a potato masher to mash the beans with the remaining olive oil, lemon juice, and tahini until you reach a chunky, soft purée consistency. If the mixture splits or becomes too thick, stir in a drop of cold water to restore texture.
