Ingredients

  • 8 red peppers, deseeded and roughly chopped
  • 10 red chillies, roughly chopped (with seeds)
  • Finger-sized piece fresh root ginger, peeled and roughly chopped
  • 8 garlic cloves, peeled
  • 400g can cherry tomatoes
  • 750g golden caster sugar
  • 250ml red wine vinegar

Instructions

  1. Step 1: Tip the peppers, chillies, ginger, and garlic into a food processor and blitz until very finely chopped.
  2. Step 2: Transfer the mixture to a heavy-bottomed pan. Add the cherry tomatoes, sugar, and red wine vinegar, then bring everything to the boil.
  3. Step 3: Skim off any scum that rises to the surface. Reduce the heat to a simmer and cook for about 50 minutes, stirring occasionally.
  4. Step 4: When the jam starts to thicken, cook for 10–15 minutes more, stirring frequently to prevent sticking and burning. It should look like thick, bubbling lava.
  5. Step 5: Allow the jam to cool slightly, then transfer it to sterilised jars. Let cool completely before sealing.
